New ‘look’ at Simon’s Tavern

bottleshopimageA change of brand, a change of ownership and a refurbishment of the bottleshop have paved the way for the spiralling success of Simon’s Tavern, Boonah, in the heart of Queensland’s Scenic Rim.

Formerly under the Thirsty Camel banner, the hotel and bottleshop switched to Bottle-O coinciding with the lease to partners Gary Achari and Linda Pedersen last October.

Gary and Linda, who both have worked extensively in the liquor industry, spent 12 months looking for a suitable pub before settling on the Boonah landmark.

“We had a look at Simon’s Tavern which had been recently renovated, and liked what we saw,” Linda said.

“The hotel is one of four hotels in the town but they were all offering the same thing….country pub food and country hospitality.”

“We thought we’ve got to have a point of difference, so we employed two Sri Lankan masterchefs from overseas, reopened the restaurant and offer an international cuisine which includes curries, steaks, and Moroccan and Lebanese food in a comfortable and relaxed atmosphere.”

Linda said the bottleshop was fairly run down when they took over the business. The main sales these days are dark RTD and beer.

Rebranding the drive through to ‘Bottle-O’, with its strong promotional and key retail programs, has helped to make it a profitable category managed retail outlet.

A new innovation at Simon’s Tavern is our food and wine matching evenings. With McWilliams Wines, Pernod Ricard, Brown Brothers and Australian Fermenters showcasing their premium wines and our chefs complementing cuisine, which has become a palatable pairing highlight for the locals each month.

This also coincided with the renovation of our Function room ‘The Rose Room’ where we have brought to Boonah such acts as Wickety Wak, Comedy Club and the Four Kinsmen utilising this great facility at the tavern.

All these initiatives have helped to grow the business and increase our range in our retail outlet.

Simon’s Tavern is also heavily involved in the local community and events. They are actively involved in the Chamber of Commerce and have sponsored local events such as the campdraft at the Boonah Show, the local Virago team and the Simon’s Strikers squash team, and is the venue for the local Rotary Club which meet at the Tavern weekly.

Gary and Linda are really enjoying their move to the Scenic Rim and are proud of the achievements created with our partnership with Bottle O and IBA.
